Soup on Sundays Recipes: CREAM OF CARROT-GINGER-SWEET POTATO
Ingredients
6 large sliced carrots
1 medium chopped sweet potato (yam)
1 large potato
1 large sliced onion
2 (but I put 4!!) cloves of garlic
2 (but I put 3!!) Tbsp finely chopped fresh ginger
(the more garlic & ginger, the more energizing the soup!!!)
olive oil
3 cups of water
3 cups milk (or soya milk)
salt & pepper
Combine all ingredients and simmer, partially covered, for about 15 minutes, stirring occasionally. Process in food processor until smooth.
N.B. Can use more milk and less water, or vis-versa.
